Crystalbrook Collection has appointed Tara Sullivan as its new Group Director of Food & Beverage, a move aimed at enhancing the company’s food and beverage offerings across its 17 restaurants and bars.
With over 25 years of experience in hospitality, Sullivan brings extensive knowledge and a passion for innovation, focusing on creating exceptional guest experiences. Crystalbrook Collection, known for its sustainability-driven approach, believes Sullivan’s leadership will continue to elevate its dining experiences.
Geoff York, CEO of Crystalbrook Collection, praised Sullivan for her energy and expertise. “Tara’s skills and passion for people make her a perfect fit for our leadership team,” York said. “She understands that dining is more than just food; it’s about creating a memorable atmosphere, collaborating with local suppliers, and offering a welcoming experience for guests. We’re excited to have her lead the way in enhancing our food and beverage experiences.”
Sullivan, who previously served as Chief Operating Officer at Lotus Dining Group, takes on her new role at a time when Crystalbrook Collection is expanding its upscale yet accessible dining experiences. She also steps into the role of Chairperson for Women in Hospitality (WOHO), a non-profit that supports the careers of women in the hospitality industry through mentorship, education, and networking. Sullivan succeeds Julia Campbell, the founder of WOHO, who will remain in an advisory role.
At Lotus Dining Group, Sullivan was instrumental in the company’s strategic growth and partnerships with hotels. She has also held leadership positions at The Grounds Group and Solotel, where she oversaw large-scale operations. Throughout her career, Sullivan has been a strong advocate for diversity and inclusion within the hospitality sector.
“I was drawn to Crystalbrook because of its commitment to offering exciting and accessible experiences,” Sullivan said. “The company’s hospitality philosophy truly resonates with me, and I am excited to work with the team to create unforgettable dining experiences that reflect our shared values, while having fun along the way.”
A strong supporter of sustainable dining practices, Sullivan is committed to working closely with local producers and minimizing food waste. She believes that hospitality is found in the small details—whether it’s how a cocktail is made or the stories behind the ingredients. Under her leadership, Crystalbrook Collection aims to continue driving the future of hospitality in Australia.
